Geoff and Cheri's Mac and Cheese

Ingredients
2 lb elbow macaroni or small shells
5 Tbs butter
1 tsp onion powder
1 tsp garlic powder
salt and black pepper to taste
1/2 tsp cayenne pepper
5 Tbs flour
3 cups heavy cream
2 cups whole milk
16 oz block cheddar cheese, i used mild
16 oz block Monterey jack cheese
16 oz block colby jack cheese
4 oz of Kerrygold Dubliner cheese

Hello friends welcome to cooking with Claudia today I'm showing you how to make this cheesy delicious creamy mac and cheese this is a very rich mac and cheese that is perfect for Thanksgiving or Christmas dinner let's get started we're going to start by cooking some elbow maconi according to package instruction in some salted boiling water make sure you stir the macaroni periodically while it's cooking that way they don't stick together when the Macar has finished cooking drain and set aside for later we're using fresh block cheese for the mac and cheese we have some cheddar cheese colby jack cheese and Montery jack cheese I'm going to shred the cheese in my food processor
I highly recommend shredding your own cheese because the storeo shredded cheese will devalue The Taste and texture of your Mac and cheese melt some butter in a pan over medium heat once the butter has melted we're going to add some spices we're adding garlic and onion powder cayenne pepper salt and black pepper wasis the spices in with the butter and cook for 30 seconds to release your flavors then add some allpurpose flour whisk the flour in then cook for about a minute to get rid of that raw flour taste the flour will also begin to Brown a little which will add flavor to the mac and cheese next we're going to add some whole milk and heavy cream all of that cream will make the mac and cheese very creamy mix everything together and let the sauce simmer gently on medium heat until it begins to thicken
Turn your heat all the way down then gradually add half of the shredded cheese to the sauce when you keep the heat very low and adding the cheese gradually it will prevent your sauce from separating and becoming grainy and clumpy so if you want the best creamy dreamy tasting mac and cheese make sure you follow these steps very well okay guys once the cheese has melted into the sauce stop mixing and remove the saucefrom the Heat next we're going to add the cooked macaroni then mix the macaroni in with the cheese sauce very well once everything is mixed in go ahead and pour half of the mixture into a baking pan then top with half of the remaining shredded cheese add the rest of the macaroni mixture then top with the remaining shredded cheese
Make sure your oven has been preheated to 375° F we're going to bake the mac and cheese for 20 minutes for the last 3 minutes of baking I put my oven at the broiler setting to get the top crispy and golden brown.
